Wednesday is National Chocolate Cake Day and may I say thank you for that! We owe thanks as well to Dr. James Baker who created a way to grind the cacoa beans back in 1764 and to the beloved Betty Crocker who launched their first series of dry cake mixes in 1947. Just one tempting slice is usually enough but what’s the all time favorite for you? Is it that boxed mix you grew up with , improved with a few personal touches? May I recommend the books by Anne Byrne, better know as The Cake Mix Doctor? I have all her books and have given as gifts. Great way to jazz up the same old same old.
But being the classic lovers that we are, do you make your cake with a cherry Coke, or mayonnaise and will you share that secret ingredient with us? I also have a few recipes that do not include sugar, gluten or dairy if you need those options.
