A Date To Keep Off The Quarantine 15

I've bought protein bites before but always thought for the size - and the price - I could do better. I think I did! The Coconut Protein Bites are just a lovely little piece of heaven at 108 calories and 5 grams of protein in each one. The recipe comes from Ifoodreal.com and I've found some other great recipes there.

Let’s start with the basics of getting out the food processor to pulse the almonds into a course, flour -texture. Takes very little time and then come the dates. That’s where the sweetness comes from. No processed sugar here. Save a little time by getting the dates that are already pitted. If not, it only takes a few minutes to take care of that. Oh, and plan on washing your hands a lot. Things get a little sticky.

This is where I wished I had used the larger processor bowl. I put the dates on top of the nuts to process and it was a tight fit. Taking the time to scrape down the sides worked well and now comes the fun part - adding the protein and cacao powder for a nice, big bowl of dough.

I moved the dough from the food processor to a mixing bowl to make sure everything was incorporated well and added the chocolate chips. I used Lily’s Dark Chocolate Baking Chips that are 55% cacao and sweetened with Stevia. Now we get sticky with it.

The little scoop I used for cookie dough is the perfect size for the protein bites. Plan on getting your hands very sticky. This could be a fun little activity for you and the kids to scoop, roll into a ball then roll in the coconut. I put the majority in the freezer and they’ll be fine for up to three months. Like they’re going to last that long. The rest are in the freezer at The Dove so I have one to enjoy in the mornings with my Lemon Zinger or Orange Spice Tea. My new addiction from Celestial Seasoning that are caffeine free.

The finished product has 108 calories per piece (makes 27) 5.2 grams of protein, 15.7 carbs  and 12.6 grams of sugar. One is enough to cure any craving in Ann Kelly’s Quarantine Kitchen to keep away the Quarantine 15. This past week was not bad for me. I’m down almost ten pounds and very happy about that.
