Be kind. Two little words that we all need to take to heart. There's even a new emoji that's popped up for sending a little love and a virtual hug. There's an unbelievable amount of stress in our lives and personally, I felt like I hit a brick wall by Friday and just wanted it all to go away. But that's not going to happen so I did what makes me feel good - cooked. In Ann Kelly's Quarantine Kitchen we share. So my go-to favorite of slow-cooker BBQ Pulled Chicken is going over to my friends home for dinner. Very shareable for someone who know who's had a bad day. Or just likes BBQ.

For me it's a nice big bag of chicken breasts marinating away and ready to grill tomorrow. Now that will help you keep off the Quarantine 15 when they're in the fridge and ready to pop on top of a salad, a wrap or whichever way you prefer. But they keep me honest. I really rummaged through the freezer and used up a few more items, one of which was salmon. I like something that's not going to take a lot of work but delivers  a lot of flavor. Done and done with a recipe that lets me use frozen fillets right out of the freezer. I prefer to have mine chilled with a little fresh tzaziki sauce. Wouldn't either recipe be nice to share with Mom next Sunday for Mother's Day?

Tomorrow I’ll be doing a couple of no-cook recipes that I’ll keep on hand for snacks - the protein bites I mentioned in my last blog. Easy is good right now and life will get better in Ann Kelly’s Quarantine Kitchen.
