Keeping Off The Quarantine 15

Gyms are now open and restaurants will be allowed to operated at 50% capacity under Phase One restrictions. If you do choose do head to the gym to start losing the Quarantine 15 you may have picked up over the past couple of months, good for you! But if you’ve been following along as I’ve been working to keep it off it’s going very well. Just under 11 pounds gone! It’s taken some real work to avoid the easy hunger fixes of those salty and sweet snacks. But making changes for the rest of my life is definitely a one day at a time thing.

This weekend I took the salmon filet's I had stashed in the freezer - two pounds worth - and defrosted those in less than an hour in a bowl of cold water. Make sure you keep them sealed while you do that or you'll end up with fish mush. The recipe I adapted came from came The Meal Maven. I say adapted since I was missing a few items like the scallions which I left our entirely and the fresh herbs. Those were any easy sub using one-third as much dried as fresh. But the result was a tender, flaky, lightly flavored filet that are now individually saved in the freezer for meals to come. What was a feast for my senses on a Sunday morning came from the aroma of all that citrus while prepping the oranges, lemons and limes. Oh, and I'm very glad I have my little juicer. Save minutes and produces a lot more juice.

Poaching is so easy, taking only minutes. The full recipe is in the link above but all you basically do is get place the salmon in the pan, cover with water and the juices, place your sliced fruit on top with the herbs and let it come to a boil. Then all you do is take it off the heat, cover with a tight lid for 20 minutes then let cool on a plate. Healthy, flavorful and you’ve just prepped around six servings in less than an hour.
