When you think of a lawyer sitting down to write, you think of a legal brief. It’s slightly different for attorney Nick Katsoris. Thanks to a sweet little Greek candy called Loukoumi, a series of children’s books were born along with the lamb who’s star of each story, aptly named Loukoumi. Nick was kind enough to give us a few minutes in Kelly’s Kitchen to talk about his latest “Loukoumi's Celebrity Cookbook .” Celeb Chef Cat Cora introduces the stories and a portion of the proceeds from each book benefits Chefs for Humanity and St. Jude Children’s Research Hospital. There’s no shortage of recipes that would be perfect for this weekend’s Super Bowl matchup. After all, when you have someone as special as the halftime entertainer this year -  Beyonce - you have to make sure she gives up a recipe!

   That’s just one from a slew of celebs that have lent their culinary talents to the book. But the books are much more than just children’s stories; there are life lessons in each one. I think this is the main reason I love the books and what Nick does with them. He sponsors the annual Growing Up with Loukoumi Dream Day contest granting kids the opportunity to spend the day in their dream careers. Past winning kids have witnessed the landing of a spaceship on Mars, played soccer with the NY Red Bulls and cooked on the air with CBS chef Tony Tantillo and visited Rachael Ray on the set of her hit show. Based on his book Loukoumi's Good Deeds, he rallies thousands of kids each October to do a good deed on National Make a Difference Day by sponsoring Make a Difference with Loukoumi Day. There’s something to keep in mind this year.
