   Tofu? I don’t think so…until now. Ann Kelly eating her own words in Kelly’s Kitchen since I had a heavenly slice of the Chocolate Silk Pie from Nature’s Food Patch in Clearwater. The Patch has always been my go-to place for their exceptional salad bar. I grab that and head to the beach to decompress and enjoy the view. No finer way to end the day. But I’ve never taken advantage of their healthy bakery items…until now. You had me at chocolate.

   The slice of pie looked decadent enough; graham cracker crust, creamy chocolate filling and a nice sized slice at that. No, I didn’t initially take the time to look at the ingredients; I just thought it was a nice treat at the end of the day. That first forkful? Wow…and then I did look at the list of ingredients. Tofu was the main ingredient!  I emailed Laurie Powers, the store director, who promised to send me the original Mori-nu tofu recipe that they adapted for this dairy free pie they’ve been making it for over 22 years.  Looking forward to receiving that and sharing it with you. I did go online to their site and found another recipe for chocolate silk pie that looks equally good and one surprising ingredient in addition to the silken tofu in the chocolate filling? Blackberry preserves.  Yes, I’m going to make one for myself for a vacation treat.
