   I think I’m getting better at this self-control issue. How else would you explain two dozen Bacon, Egg and Cheese biscuits sitting intact, in the kitchen along with a Cinnamon Coffee Cake, and I’m not in there sneaking another "just to be sure they’re okay" taste?! I will admit to having one biscuit because I really would never bring something into the office I haven’t eaten myself. But all is well in Kelly’s Kitchen, and everyone gets a treat in the office.

   I love Sundays that are all mine to do whatever I wish; maybe you’re waking up with the kids and making one of those fun breakfasts that only the creativity of your child could come up with, or perhaps you’re already at the beach with a cup of your favorite brew, just lazing the day away. But for those you have been working hard out in the yard, doing laundry or catching up on paperwork, you do deserve something good and comforting, and that’s what we have for you in Kelly’s Kitchen.

   The Cinnamon Coffee Cake comes from one of my favorite authors, Anne Byrne, otherwise known as the Cake Mix Doctor. She has easy recipes that start with a basic cake mix that you add a few ingredients to and come up with some very nice dishes. I have all of Anne’s books. You and I can never leave well enough alone of course, so I added a nice vanilla glaze to this. You have to share the foodie love when you start enjoying the aroma of all that cinnamon and vanilla wafting through the house!

   And then, there’s the Bacon, Egg and Cheese Muffins that are tremendous, and another recipe you can play with to make it your own. I didn’t have enough sour cream, so I used plain yogurt and it’s so moist and delicious. If you want to use a lower fat bacon item, like turkey bacon, pancetta, whatever your heart desires, go for it. I’m not a huge fan of butter substitutes. I find them to be a little on the watery side for most baking, so yes, I used the real thing. But since you make these in the muffin tin they are easily frozen and you can have a batch on hand for a brunch, quick meal on the run, or maybe just a little something at the end of the day. They are just that good. I found the original recipe on The Cooking Bride when I was Googling some other recipes, and I’ll hold on to this one.
