    Easy is good right now. A million things to handle for the holidays and everyone wanting just “a little something.” No problem. I’ve had more than a few of you send along suggestions for Kelly’s Kitchen, and it’s always a pleasure to share those.

   One that went over very well for me at a staff party were the chocolate covered pretzel rods that are simply dipped in melted chocolate chips and rolled in anything you like, from more chocolate mini-chips, crushed nuts, whatever you crave. But here’s a delicious suggestion; melt caramels first and dip the pretzels in that first, then the chocolate. So good, and our video will walk you through it. Let the kids choose their favorite toppings!

   Don’t completely freak out when it comes to those appetizers either. One of my favorite Food Network people, The Barefoot Contessa, makes so much sense when it comes to keeping your sanity. Make two (simple ones) and buy two. You should always enjoy the party as much as your guests, right? A bite or two per appetizer is just fine.

   I also had my friend Len send me a recipe for an Ancho Chile-Cinnamon Chocolate Bark that sounds really great. The combination of a bit of heat and sweet is unbeatable, and I highly doubt there will be many leftovers.

   And of course, putting together an appetizer buffet with everyone bringing their favorite to share takes a load off the chef’s shoulders. You take care of the beverages, and make sure to ask in advance for what everyone is sharing. That will avoid too much of one thing.
